MMM-mmm Muffins!
Mango-Macadamia / Apricot Muffins
Egle from Oak Bay Guest House is famous for her muffins, and for good reason! Although Egle doesn't often give away her secrets, she has indulged us with this delicious recipe for Mango-Macadamia Apricot muffins. She says the recipe came with the house...now that's an authentic historic inn recipe!

Bake at 350 F for about 23-25 minutes. Makes 11-12 muffins.
Topping
- 1/3 finely chopped unsalted macademia nuts or walnuts
- 1/4 cup flour
- 1/4 cup firmly packed brown sugar
- 1/4 tsp. cinnamon
- 2 Tbsp. butter
Batter:
- 2 cup flour
- 1/2 cup sugar
- 1 Tbsp. baking powder
- 1/4 tsp. baking soda
- 1/4 tsp. salt
- 1 egg
- 1/2 cup sour cream or yogurt
- 1/2 cup milk
- 1 tsp. vanilla
- 1/4 cup (1/2 stick) melted butter
- 1.5 cup diced ripe mango (1 large one)
- 2 or 3 apricots (diced)
Mix topping ingredients together. Set aside.
Preheat oven at 350 F. Grease muffin tins.
Stir together dry ingredients.
Stir together wet ingredients.
Mix wet into dry just until moistened and evenly blended.
Fill muffin tins.
Crumble topping evenly over muffins.
